Substantial Salad

Salad dosen't have to mean lettuce + chopped up celery, there are so many things you can add to a salad to make it nourishing, substantial + satisfying!!


This salad is one of my favorites when I'm needing something to really refuel me from a long day and is the perfect combo of foods blast my taste buds with goodness :)


Heres the recipe:

~ 1 butternut squash

~ 2 beets

~ Kale + spinach

~ Balsamic Glaze

~ Leeks

~ Lemon

~ Chives + parsley

-Preheat oven to 375 degrees

-Peel the butternut squash. Cut up butternut squash and beets into cubes, place on a baking sheet in the oven for 30-40 minutes until tender and cooked

-Chop up the whites of the leeks (say the greens for soup) into little 1 inch rounds. Steam until thoroughly cooked.

- Massage kale and spinach with the juice of a lemon. Chop up herbs and add them in.


Place everything in a big bowl and drizzle with basal,ic gala.
